for the fermentation time then cold
filter and they do the bottling. It takes about 2 2hr visite and best of all we do all
of the dirty work! As far as I know, there are 12 B.O.P.s in the US but they are
really popular in Canada.

Sources from the brewery (cedrbrew@televar.com) report: Our brewer's name is Jay Fisher and we feature a seven
barrel DME brewing system. Usually we have anywhere
from six to eight beers on tap. We also produce cask
conditioned ales. We're not distributing (and don't
plan to anytime soon) but we do a 1/2 gallon growler
to go. Our chef is Kevin Warren and we serve both
lunch and dinner of the up-scale variety.

two men and is located in a light industrial area. From the outside, you would

coworker sampled the stout. His review agrees with mine - some of the best beer
I have had. Check it out, you will not be disappointed.

- Brewer of some magnificent beers, formerly distributed to Texas, sadly no more so.
- Chuck Sheldon, (skitime3@cs.com) reports:Although not one of
the biggest names in Seattle (Pyramid and Redhook), the
Pike Brewing company has an ambiance all its own. With a definite local
atmosphere, the brewery is located one block from the Pike Place Market (@the wharf).
Naughty Nellieâs Ale was a mildly hopped refreshing beer with a complex malt character and a
soft creamy head (and Wendy's pick of the day!). The Bootleg Brown Ale is a classic British Nut
Brown, unusually soft for an American version. A very smooth aftertaste made this one a pleasure
to try. The Pikes Pale Ale is medium to full-bodied with a deep copper color and a nutty malt flavor.
The Pike Kilt Lifter Scotch Style Ale is a classic Scotch style ale. Lightly hopped with a strong, sweet
malt character and just a hint of peaty smokiness. The kilt lifter lifted my kilt @ 6.6 per volume, and was
my pick of the day!! Pikeâs brews 1800 gallons of the lifter per year!! The Pike XXXXX Stout is not as thick as
some, but is still full-bodied.
p chocolate color, with a velvety malt texture and dark roasted flavor. They have great food ranging from burgers to Prime
Rib and the pizzaâs are great! John Stevens is the manager and does a great job. Kim Brusco is the head brewer and has really
done an excellent job. We recommend Pike's highly and will return.

- (MB/BP)Pyramid Brewing Co./ Ale House 91 S. Royal Brougham 206-682-3377
- Chuck Sheldon, (skitime3@cs.com) reports:Located at 1st Ave. and Royal Brougham across from SafeCo field,
this establishment caters to the sports enthusiast as well as someone searching for a high-end brewery dining experience. The food is better than
normal brew pub fare, leaning more towards a fine dining experience. The beer selection has depth, and overall holds up nicely. There were nine beers
on tap when we visited. The Hefeweizen is a cloudy wheat brewed ale with a smooth, refreshing taste. This one seemed better without the traditional
lemon wedge and stands @ 5.1 alc. The Apricot Ale is a zesty golden wheat ale with a distinctive hint of fresh Apricots. Not too sweet and Wendy's
pick of the day. The IPA is loaded with tangy Columbus hops, and there it is a hoppy brew. The tilted Kilt is a rich and smooth Scottish Ale with
deep full bodied character. Brewed with authentic Scottish whiskey malt, this brew packs a punch @ 6.3 alc. and is my pick of the day!! The head
Brewer is John Emery, and he has done a great job. Rating from 1-10 (9)

- (P)Roanoke Park Place 2409 10th Ave E 324-5882
- (BP/MB)Redhook Trolleyman Pub 3400 Phinney Ave N 548-8000
- Chuck Sheldon, (skitime3@cs.com) reports:Located in the Old Brick Brewery, which now resides as a warehouse (the brewery is now in Woodenville Wa.), the tasting
room/eatery is a great watering hole for the locals, without the corporate hype of some of the larger establishments. Although
the actual area is small, the northwest feel is ever-present. The bar sits 15 and there are five family style tables. Off in the
corner is a very comfortable setup with lounge chairs, couches and a LARGE fireplace that is perfect for enjoying a relaxing
evening out of the elements.
The food menu is small, but the beers make up for it. The Redhook ESB is full bodied and highlights a malt character and a mellow
hop finish. The Tettang and Willamette hops seem to keep it away from the overly bitter after taste that comes with some ESB's.
The Nut Brown Ale was just that·nutty, offering drinkers mellow toasted grain flavors.
The Blackhook Porter is the oldest brew in the Redhook family. The addition of a highly roasted black malt provides toasty flavors, and was Wendy's
pick of the day!! The Chinook Copper was cask-conditioned and dry hopped, cellar aged, gently carbonated and served on a hand pump leaving a very
smooth body with no real aftertaste to speak of and my pick of the day!! Rating from 1-10 (9)

- Another branch of the Denver based chain
- sherrig@nlic.com reports: Located in the center of the financial district in downtown Seattle
it is extremely popular with attorneys, stockbrokers and weekend tourists.
Their beer was a bit "weak" in my opinion. However, now that they have had
time to tweak their recipe - the flavor has improved 100%. It still isn't as good as
Redhook byt hey, it's close to the office.
