Silly Old Bear Honey Wheat Ale

- Ingredients
- 6.6 lbs Wheat malt extract
- 2 lbs clover honey
- 1 oz Tettnanger hop pellets (4.4%AA) - 45 minutes remaining
- 1 oz German Hallertau hop pellets (3.5%AA) - 10 minutes remaining
- 1/2 tsp Irish moss - final 10 minutes
- 1 pkg Wyeast Weihenstephan Wheat liquid yeast
- Begin yeast at least 2 days prior to brewing.
Heat 1 gallon of water to boiling. Remove kettle from heat. Stir in malt extract and 2 lbs clover honey. Do not return to heat until malt extract and clover honey are completely dissolved.
Bring kettle back to boil - total boiling time is 60 minutes.
With 45 minutes remaining add 1 oz Tettnanger hop pellets.
With 10 minutes remaining add 1 oz German Hallertau hop pellets and 1/2 tsp Irish moss.
Cool, transfer to fermenter, take hydro reading and pitch yeast.
After 14 days take hydro reading and bottle. Use 7/8 cup corn sugar boiled in 2 cups of water to prime.

- After 2 weeks - not bad, but strong odors.
- After 3 months - tastes great! Strong odors are gone.
- After 4 months - perfect. The longer it sits the better it gets.
- After 1 year - best yet.

Bun-In-The-Oven Dark Honey Ale

Ingredients for 5 gallons:
- 6.6 Pounds, John Bull Unhopped Wheat Syrup
- 1 pound organic honey (add 20 minutes before end of boil)
- 2/3 pound Belgian Special B
- 1/3 pound black patent
- 1/4 cup Earl Gray tea
- 1 oz. Willamette hops (60 Min.)
- 1/2 oz. Challenger hops (15 min.)
- 1/2 oz. Challenger (1 min.)
- 7/8 cup organic honey (for priming)
- Edme ale yeast
- Heat grains and tea to 170 deg. in 1 gal water, turn off heat and let sit for half an hour...Add two more gallons to brew pot, return to boil. Turn off heat, add wheat syrup. Add hops as scheduled. Pour in 1 lb. organic honey 20 minutes before end of boil. Pitch yeast at 78 deg. Prime with 7/8 cup honey boiled in water for 20 min.
- CAUTION: Edme Ale Yeast and the extra sugars from the honey can be explosive. Watch primary carefully on day one and two. Use a blow off tube to be safe.
- This is a great summertime beer. Serve colder than most ales. Refreshing. My wife's favorite beer.
